Plums with ginger crumble

This dessert is so quick and easy to make and tastes so good!  Plums are one of my favourite baked fruits, and the ginger pairs beautifully.  I haven’t tried it yet, but I think pears would work well too.

Any mini-chefs will be able to make this without much help at all.

Serves 4

INGREDIENTS:

  • 4 plums, halved
  • 125g ginger nut biscuits
  • 40g butter, melted
  • 1/4 c currants
  • 2 tablespoons honey

METHOD:

Preheat oven to 180°C.

Roughly crush the ginger nut biscuits by placing in a zip-lock bag and rolling with a rolling pin.  (Don’t over-crush to a powder, texture is good).

Combine biscuits, melted butter, currants and honey in a bowl. 

Place plums in a baking dish and top with the ginger nut crumble.

Bake for 15 minutes or until topping is golden brown.

Serve with vanilla ice-cream
